  • 4 cups - all-purpose flour
  • 1/2 teaspoons - baking soda
  • 2 tablespoons - baking powder
  • 5 tablespoons - sugar
  • 2 teaspoons - salt
  • 1 sticks - butter or margarine
  • 1/4 cups - shortening (OR bacon grease or lard, if you prefer)
  • 1 cups - buttermilk
  • 1/2 cups - sour cream OR plain yogurt
  • Directions:

    Sift together the flour, baking soda, baking powder, sugar, and salt in a large bowl and cut in the butter and shortening, using a pastry blender or your fingers to gently mash chunks into the flour until they are about pea-size.

    Stir in the buttermilk and sour cream and mix lightly but thoroughly.  The dough should be soft, but not sticky.  (If it's a little too dry add a few drops of milk; if it is sticky, sprinkle in a little extra flour.)  Cover the dough and place in the refrigerator to cool for about 20 minutes (or longer, if you want to make the dough early in the day).

    Preheat the oven to 450 degrees F. Place a tablespoon of butter or margarine in bottom of cast-iron skillet or 9-x-13 inch baking dish and put pan in the oven to begin heating. 

    Gently roll or press the biscuit dough to about 3/4″ to 1-inch thick on a lightly floured surface and use a biscuit cutter (or drinking glass) to cut out the dough (pressing cutter straight down into dough without twisting or turning, as the twisting motion can keep the biscuits from rising as much).

    Remove the hot pan from the oven and place cut biscuits into the pan, then return the pan to the oven, baking for about 12-14 minutes (depending how thick your biscuits are.)

    Just before biscuits are fully baked, pull out the pan and brush the biscuits with some melted butter; return to the oven until golden brown, about 2 minutes longer. 

    Serve hot with your favorite flavored butter, honey, or jam.

    I used 2 teaspoons of lime juice plus enough milk to equal 1 cup in place of the 1 cup of buttermilk; it worked perfectly. I also used margarine instead of real butter, even though I'm sure real butter would make them even better.
