Herbed Goat Cheese on Crostini with Shaved Fennel Tell a Friend

  • 1 pounds - fresh goat cheese, softened at room temperature
  • 1 bunches - chives (about 1/2 cup), finely chopped
  • 6 sprigs - fresh thyme (large), leaves removed
  • 1 bunches - small flat-leaf parsley (about 1/2 cup), leaves finely chopped
  • 2 - medium shallots, finely minced
  • - salt and freshly ground black pepper
  • 1 loaves - crusty bread (baguette, ciabatta), sliced 1/2-inch thick
  • 2 tablespoons - extra virgin olive oil, plus more for brushing
  • 1 bulbs - fennel, cored and shaved thin
  • - juice of 1/2 lemon
  • Directions:

    Preheat oven to 350 degrees F. In a large bowl combine goat cheese, herbs and shallots and season to taste with salt and pepper (some cheeses may not require any salt).

    Lay the bread slices on a baking sheet and brush both sides with olive oil. Transfer to oven and toast until lightly crisp, but still slightly chewy, about 8 minutes.

    In a medium-size bowl, toss the shaved fennel with the olive oil and lemon juice and season with salt and pepper.

    To assemble: Spread a layer of the herbed cheese on the toasted bread slices and top with the marinated fennel.
