  • 8 - large eggs
  • 1/2 cups - fat-free or low-fat milk
  • 1/2 cups - minced fresh herbs (basil, parsley, etc.)
  • 1/4 cups - grated Parmesan cheese
  • Directions:

    Preheat oven to 375 degrees F.

    Spray a large ovenproof frying pan thoroughly with cooking spray. Place the pan on the stove over medium heat until drops of water "dance" when sprinkled in the pan.

    Meanwhile, blend the eggs, milk, herbs and cheese in the blender or whisk together with a wire whisk. Pour the egg mixture into the hot pan.

    Place the pan in the oven for approximately 20 minutes until eggs are firm.

    Cut into 4 wedges and serve.
