Ingredients:

  • 2 - Onions, Chopped
  • 2 - Celery ribs, Sliced
  • 3 - Potatoes, Cut in chunks
  • 1/2 pounds - Mushrooms, Quartered
  • 3 cloves - Garlic, Minced
  • 2 - Carrots, Sliced
  • 1/4 cups - Braggs Liquid Aminos
  • 1/4 cups - Red wine
  • 2 teaspoons - Fresh ginger, Grated
  • 1/2 teaspoons - Marjoram
  • 1/2 teaspoons - Thyme
  • 3 1/2 tablespoons - Cornstarch
  • - Salt & Pepper to taste
  • 2 cups - Water
  • Directions:

    Place prepared vegetables in a 3 or 4 quart pot, add water, Braggs, wine, and spices.(everything except the cornstarch). Bring to boil then turn heat down and simmer till veggies are tender; about 75 minutes. Mix cornstarch in 1/2 cup cold water, add to pot and simmer a few minutes to thicken stew. Taste and adjust salt/pepper as desired.

    Notes

    Soy sauce can be substituted for Braggs Liquid Aminos if gluten free is not a concern. There are also gluten free soy sauces available.

    A green salad or some steamed greens are both nice side dish choices with this.
