Healthy Shepherd’s Pie Tell a Friend

Ingredients:

Filling
  • 1 pounds - lean ground meat (beef or turkey)
  • 2 - medium carrots, peeled, chopped
  • 1/2 - green pepper, chopped
  • 1 - small onion, chopped
  • 2 cloves - garlic, minced
  • 1/2 teaspoons - dried rosemary
  • 3/4 teaspoons - chili powder
  • 1/4 teaspoons - sea salt, or to taste
  • 1/4 tablespoons - black pepper
  • 3 ounces - tomato paste (about 6 Tbsp)
  • 1 tablespoons - flaxseed meal plus 2 Tbsp. water, optional (or substitute 1 egg white)
  • Topping
  • 2 - medium sweet potatoes, peeled, cubed
  • 1 tablespoons - coconut oil, butter OR avocado oil
  • 1/2 teaspoons - chili powder
  • 1/4 teaspoons - sea salt
  • Directions:

    Preheat oven to 375 degrees F.

    Combine the flaxseed and water and set aside, making a flax gel.

    For the topping: Steam or bake (at 375 degrees) the sweet potatoes until fork tender, about 20 minutes. Then add all the toppings ingredients to a food processor (or blender) and process until smooth.

    Meanwhile, in a skillet on medium heat begin to brown your meat.

    Once meat is partially browned, add chopped carrots, onions, peppers and minced garlic.

    Cook on medium heat until carrots are soft, about 10 minutes.

    Once the carrots are soft, stir in tomato paste, flax gel (flaxseed and water), seasonings, salt and pepper.

    Final step: transfer the meat filling to a casserole dish (9x9 inch) and top with the Sweet Potato Mash.

    Bake for 15 minutes, remove from oven and serve.
