Grilled Lemon Chicken Tell a Friend

Ingredients:

  • 6 - boneless skinless chicken breast halves, 6 ounces each
  • Marinade
  • 1/2 cups - plus 1 tablespoon lemon juice
  • 6 tablespoons - olive oil
  • 3 tablespoons - minced fresh parsley
  • 3 tablespoons - grated lemon peel
  • 1 1/2 teaspoons - minced garlic
  • 3/4 teaspoons - salt
  • 3/4 teaspoons - dried thyme
  • 3/4 teaspoons - dried marjoram
  • 3/4 teaspoons - pepper
  • Directions:

    In a small bowl combine all the marinade ingredients. Pour 1/3 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for up to 1 hour. Cover and refrigerate remaining marinade.

    Drain and discard marinade. Grill chicken, covered, over medium heat for 5-8 minutes on each side or until a meat thermometer reads 170 degrees F, basting occasionally with reserved marinade.
