Grilled Chicken Spinach Pizza Tell a Friend

Ingredients:

Pizza
  • 1 - boneless, skinless chicken breast
  • 1/2 tablespoons - olive oil
  • 1 cloves - garlic, minced
  • 1/2 cups - half and half or heavy whipping cream
  • 1/4 teaspoons - xantham gum
  • 1 cups - fresh spinach, roughly chopped
  • 1/2 cups - part skim shredded mozzarella
  • Fathead Dough
  • 2 ounces - cream cheese
  • 3/4 cups - shredded mozzarella
  • 1 - egg, beaten
  • 1/4 teaspoons - garlic powder
  • 1/3 cups - almond flour
  • Directions:

    For Crust:

    Melt mozzarella and cream cheese in microwave for 30 second intervals, mixing often, until melted and combined well. In a separate bowl, mix together beaten egg, almond flour, and garlic powder.

    Combine well and keep mixing until a sticky dough consistency is reached; refrigerate dough while preparing sauce and chicken.

    Pizza:

    Saute chicken in a skillet over medium heat until done. Remove and set aside. Add garlic and xantham gum to skillet with half-and-half; bring to a boil. Reduce heat to simmer when sauce starts to thicken. Fold in spinach and cook just until the spinach is wilted.

    With hands, work dough out into a circle on a pizza pan; bake at 350 degrees F for 10 minutes. Spread sauce / spinach mixture onto cooked pizza crust, and top with chicken and shredded cheese. Bake 5 minutes more or until cheese is melted.

    Allow to cool slightly before serving.
