Sugared pecans
  • 1/2 cups - Pecan pieces
  • 2 tablespoons - Granulated Sugar
  • For the Salad
  • 6 - Baby Spinach
  • 1 heads - Red Leaf Lettuce
  • 1 whole - Granny Smith Apple, Cored and very thinly sliced
  • 4 - Feta Cheese, Crumbled
  • For the Dressing
  • 1/4 cups - Red Onion, Finely chopped
  • 3 tablespoons - Red Wine Vinegar
  • 3 tablespoons - Balsamic Vinegar
  • 1/2 cups - Olive Oil
  • 2 tablespoons - Granulated Sugar
  • 1 cloves - Garlic, minced
  • 1/4 teaspoons - Salt
  • 1/4 teaspoons - Black pepper
  • Directions:

    Place nuts in a medium skillet with 2 tablespoons sugar. Cook over medium-high heat until nuts are coated and brown, stirring constantly, about 4 minutes; set aside.

    Toss salad greens, apples and cheese.
    Combine dressing ingredients in a small jar and shake vigorously (I usually just use the blender). Pour over the salad just before serving.

    Sprinkle with sugared nuts.

    Brief Description

    This is my favorite salad and it is always a hit when I take it to a gathering. You can use any combination of salad greens that you like; I use whatever I have on hand. I shouldn’t admit it, but I could drink this dressing.
