Green Risotto Tell a Friend

Ingredients:

  • 1 1/2 pounds - fresh spinach OR 8 oz. frozen spinach
  • 1 cups - frozen peas, thawed
  • 6 cups - chicken broth
  • 5 tablespoons - butter
  • 1 - onion, chopped
  • 1/4 pounds - bacon, diced
  • 2 cups - Italian Arborio rice
  • 1/4 cups - white wine
  • 1 cups - Parmesan cheese
  • - salt and pepper, to taste
  • Directions:

    Cook spinach and reserve.

    Saute bacon and onion in butter. Stir in rice, and brown.

    Add wine and enough broth to cover rice. Cook until liquid is absorbed (about 15 minutes).

    Add remaining broth and peas. Cook for 10 minutes.

    Add spinach and Parmesan. Season with salt and pepper.
