Green Chile Enchilada Casserole Tell a Friend

Ingredients:

  • 1 1/2 pounds - Ground Meat (beef, venison, elk or combo)
  • 1/2 cups - Onion
  • 2 cloves - Garlic
  • 12 whole - Corn Tortillas
  • - Oil for frying
  • 2 cans - Cream of Mushroom soup or Chicken Broth
  • 1 cups - Green Chile
  • 1 cans - Ripe Black Olives
  • 2 cups - cheddar or monterey jack cheese
  • Directions:

    Brown meat, drain fat. Add onion and garlic; cook 5 minutes. Set aside.

    Fry tortillas in oil; drain on paper towel. Set aside.

    Mix soup and chile to make sauce; add olives.

    Layer 1/2 of meat, 1/3 of cheese, tortillas, 1/2 of sauce, and repeat layers accordingly. Then top with remaining cheese. Cover casserole with foil. Bake at 350 for 35-45 minutes.

    Notes

    Another option for the sauce is to use a ready-made enchilada sauce and simply add the green chilies and olives.
