Greek Tomato Salad Tell a Friend

Ingredients:

  • 2 - pita breads
  • 1 - lemon
  • 1/4 cups - olive oil
  • 1/4 teaspoons - salt
  • 1/4 teaspoons - cracked pepper
  • 2 pints - grape or cherry tomatoes, halved
  • 1/2 cups - thinly sliced red onion
  • 1/2 cups - pitted kalamata olives
  • 1/2 cups - chopped fresh dill
  • 1/2 cups - chopped fresh mint
  • 4 ounces - feta cheese, crumbled (1 cup)
  • - lemon slices and fresh dill, optional

    Add 1 can of tuna, drained and flaked, and you'll have a quick and delicious main dish salad

    Notes

    Preheat oven to 350•F. Cut each pita bread into 8 wedges; spread on baking sheet. Bake until lightly browned, 8-10 minutes. Meanwhile, over large bowl, grate 1/4 tsp zest and squeeze 2 T juice from lemon. Whisk in oil, salt, and pepper.
    Add tomatoes, onion, olives, dill, mint, and toasted pita; mix well. Gently toss in feta. If desired garnish with lemon slices and dill sprigs.
