Greek Chicken and Pine Nut Dressing Tell a Friend

Ingredients:

  • 3 1/2 pounds - boned & skinned chicken breasts
  • 1/2 teaspoons - garlic powder
  • 1/2 teaspoons - oregano
  • 1 cups - olive oil
  • 8 ounces - chopped onion
  • 2 teaspoons - seasoning salt
  • 1/4 teaspoons - salt
  • 1 pounds - whipped margarine
  • 1/2 teaspoons - coarse ground black pepper
  • 6 - tomato wedges, for garnish
  • Pine Nut Dressing
  • 12 ounces - chopped ground beef
  • 4 ounces - finely chopped onion
  • 1/2 teaspoons - concentrated chicken base
  • 1/4 teaspoons - coarse ground black pepper
  • 6 cups - long grain rice or manestra (pasta), cooked
  • 1/4 cups - pine nuts
  • Directions:

    Combine all ingredients except tomatoes; mix thoroughly and marinate in fridge all night.

    Melt margarine in frying pan; add chicken and saute until tenderly done and evenly browned.

    Serve with pine nut dressing. Garnish with tomato wedges.

    For pine nut dressing:

    Saute beef, onion, chicken base, garlic powder, pepper and pine nuts until onions are tender. Add mixture to rice or manestra.
