Grandma Jo’s Zucchini Bread Tell a Friend

Ingredients:

  • 3 - eggs
  • 3 teaspoons - vanilla
  • 3 cups - zucchini, grated
  • 1 cups - salad oil
  • 2 cups - brown sugar
  • 1 teaspoons - baking soda
  • 3 cups - flour
  • 1 teaspoons - salt
  • 3 tablespoons - cinnamon
  • 2 tablespoons - nutmeg, or 3 tablespoons if desired
  • 1/4 teaspoons - baking powder
  • 1 cups - pecan pieces
  • Directions:

    Beat egg, add oil, sugar, zucchini, vanilla. Mix lightly. Sift flour, salt, baking powder, soda, cinnamon, nutmeg. Mix well. Add flour, mix to egg mixture a little at a time until blended. Mix. Add nuts by hand. Bake in 2 greased loaf pans at 325 degrees for 1 hour. Cool for 10 min.
