Ingredients:

  • 1 tablespoons - vegetable oil
  • 2 pounds - Lean, boned bottom round roast, cut into 1-inch cubes
  • 2 cups - plum tomatoes, diced
  • 1 1/2 cups - red onion, vertically sliced
  • 1 cups - green bell pepper, diced
  • 1 cloves - garlic, minced
  • 2 cups - red potatoes, peeled, cubed
  • 1/3 cups - red wine
  • 1/4 cups - water
  • 1 tablespoons - lemon juice, fresh
  • 1 1/2 teaspoons - paprika
  • 1 teaspoons - caraway seeds
  • 1 teaspoons - marjoram, dried
  • 1/2 teaspoons - salt
  • 1/2 teaspoons - pepper
  • - beef broth
  • Directions:

    Heat oil in a dutch oven over medium-high heat. Add beef, browning on all sides. Remove from pan. Add tomato, onion, bell pepper, and garlic - sautee for 10 minutes. Return beef to pan and stir in potatoes and remaining ingredients. Bring to a boil. Cover and reduce heat. Simmer for 1 1/2 hours or until beef is tender.
