Go Bleu Cheese Dip with Garlic and Bacon Tell a Friend

Ingredients:

  • 7 slices - bacon, diced
  • 2 cloves - garlic, minced
  • 8 ounces - cream cheese, at room temperature
  • 1/4 cups - half and half
  • 4 ounces - bleu cheese, crumbled
  • 2 tablespoons - chopped fresh chives
  • 3 tablespoons - chopped smoked almonds (about 1 ounce)
  • Directions:

    Preheat oven to 350 degrees F.

    Cook bacon in heavy large skillet over medium-high heat until almost crisp; add garlic and cook until bacon is crisp. Drain on paper towel.

    Using an electric mixer, beat cream cheese until smooth; add half and half and beat until combined. Stir in bacon mixture, bleu cheese and chives.

    Transfer to 2-cup baking dish; cover with foil. Bake for 15 to 20 minutes.

    Sprinkle with chopped almonds. Serve with crackers or vegetables.

    Note: This can be prepared a day ahead. Keep refrigerated; bring to room temperature before baking.
