Glazed Brussels Sprouts w/ Onions and Almonds Tell a Friend

  • 1 1/2 pounds - Brussels sprouts
  • 1/2 cups - Sliced almonds
  • 1 whole - Yellow onion, Sliced or julienned
  • 1/4 cups - Olive oil
  • - Salt, to taste
  • - Pepper, to taste
  • 1/2 cups - Balsamic vinegar
  • 1/4 cups - Packed brown sugar
  • Directions:

    1. Heat oven to 375.
    2. Trim Brussell sprouts and cut in half.
    3. Combine sprouts, onion and almonds. Toss with olive oil.
    4. Arrange ingredients on a baking sheet lined with foil or parchment paper. Sprinkle with plenty of salt and pepper. Roast for 25-30 minutes or until brown.
    5. While sprouts are roasting, combine balsamic vinegar and brown sugar in a saucepan. Bring to a boil, then reduce heat to medium-low and reduce until very thick, about 15-20 minutes.
    6. Drizzle the balsamic reduction over Brussell sprouts and serve.
