Ginger and Spring Onion Stir-Fry Tell a Friend

  • 9 ounces - dried egg noodles
  • - Fry Light spray
  • 10 - spring onions, roughly chopped
  • 2 cloves - garlic, crushed
  • 1 - red pepper, deseeded, sliced
  • 7 ounces - baby sweetcorn, halved lengthwise
  • 1/2 - inch piece fresh root ginger, grated
  • 4 tablespoons - dark soy sauce
  • Directions:

    1. Prepare the egg noodles according to package directions; drain and set aside until required.

    2. Meanwhile, spray a pan with Fry Light and fry the spring onions, garlic, red pepper, sweetcorn and ginger for 6-8 minutes.

    3. Add the cooked noodles to the pan along with the soy sauce. Toss to mix well and stir-fry for another 1-2 minutes. Divide between four warmed bowls and serve.
