German-Style Potato Salad Tell a Friend

  • 10 slices - Bacon
  • 2 pounds - New potatoes (about 6 medium), Unpeeled
  • 1 whole - Small red onion
  • 1 whole - Egg
  • 1/2 cups - Sugar
  • 1 tablespoons - Flour
  • 1/2 teaspoons - Dry mustard
  • 1/2 teaspoons - Salt
  • 1/3 cups - Water
  • 1/3 cups - White wine vinegar
  • - Salt, to taste
  • - Pepper, to taste
  • Directions:

    1. Cook bacon until crisp. Drain and crumble 7 slices, reserving reamaining bacon for garnish.
    2. Cook potatoes in boiling water until just tender, about 30 min. Drain. When cool enough to handle, cut into 1/2-in. cubes. Thinly slice onion; separate into rings and add to potatoes w/ crumbled bacon.
    3. In a saucepan, slightly beat egg; add sugar, flour, dry mustard, salt , water and vinegar and cook over medium heat, stirring until mixture thickens, about 4 min. Pour over potatoes; mix well and season w/ salt and pepper.
    4. Cool, cover and chill at least 4 hours. Before serving, garnish w/ reserved bacon, crumbled.
