Ingredients:

  • 2 1/2 pounds - ripe tomatoes
  • 2 - medium cucumbers
  • 1 - medium green pepper
  • 1 - medium onion, peeled, chopped
  • 1 cups - cold water
  • 3 slices - white bread
  • 4 tablespoons - olive oil
  • 5 tablespoons - red wine vinegar
  • 2 cloves - garlic, minced
  • 1 tablespoons - salt
  • Directions:

    Combine tomatoes, green pepper, cucumbers, onion, bread, olive oil and water into a large bowl and refrigerate one hour or overnight.

    Blend 1/2 of mixture until smooth, then repeat with other 1/2 of mixture.

    Stir in the red wine vinegar, garlic and salt. Serve.
