Ingredients:

  • 4 whole - Lrg. Portobello mushroom caps, Sliced
  • 4 whole - Bell peppers, Sliced
  • 4 whole - Zucchini, Sliced
  • 1 bunches - Asparagus, Sliced into 1" pieces
  • 2 whole - Red onions, Chopped
  • 1 1/2 cups - Canyon Foods Garlic Essence
  • 1/2 cups - Olive oil
  • Directions:

    Preheat oven to 400. Toss all indgredients in a lrg. bowl. Place the veggies onto a large foil-lined baking dish and roast in the oven for 30-45 min.
