Ingredients:

Chicken and Pasta
  • 4 - skinless, boneless chicken breasts, cut into 1/2-inch strips
  • - flour, salt and pepper
  • 1/2 sticks - butter
  • 1 - red bell pepper, cut julienne style
  • 1 - yellow bell pepper, cut julienne style
  • 1 - small onion, thinly sliced
  • 1 - tomato, chopped
  • 2 tablespoons - fresh lime juice
  • 1 tablespoons - grated lime peel
  • 1 pieces - 1-inch fresh ginger, peeled, minced
  • 3 - medium cloves of garlic, minced
  • 1/4 teaspoons - dried red pepper flakes
  • 1/4 cups - dark rum
  • - Cilantro Butter, recipe below
  • 12 ounces - fettuccine, cooked, drained
  • Cilantro Butter
  • 1 1/2 sticks - unsalted butter, at room temperature
  • 1/2 cups - cilantro leaves
  • 2 - shallots
  • Directions:

    For Cilantro Butter:
    Puree butter, cilantro and shallots in blender; transfer to container for use in recipe below.

    Chicken and Vegetables:

    Dredge chicken in seasoned flour and saute in 1/4 cup butter. Add peppers, onion, tomato, lime juice and peel, ginger, garlic, and pepper flakes. Stir and cook for 3 to 4 minutes.

    Pour rum into skillet, heat and ignite with match. Reduce heat, add cilantro butter, stir and blend.

    Pour chicken mixture over cooked fettuccine. Toss and serve.
