Farmers’ Market Pasta Tell a Friend

Ingredients:

  • - Your favorite pasta
  • 1 packages - Dried mushrooms, re-hydrated
  • - Garlic flavored olive oil
  • - Pepper Oil
  • 1 - Small Onion, chopped
  • 1 cups - Asparagus or Green Beans, cut
  • 1 cups - Caulifloweretes
  • 1 - Yellow squash, sliced
  • 1 - Red or Green Pepper, sliced
  • 1 cups - Carrots, sliced or shredded
  • 2 - Tomatoes, coarsely chopped
  • 3 tablespoons - Flat Parsley, finely chopped
  • 1/3 cups - Parmigiano Reggiano, grated
  • Directions:

    Cook pasta "al-dente." Re-hydrate mushrooms. Coat frying pan with garlic flavored olive oil. Add a few drops of the pepper oil to taste. Saute onion 2-3 min. Add mushrooms, and cook 2 min. Add asparagus/green beans, cauliflowerets, squash, pepper and carrots. Cover and cook 3-4 min. Add tomatoes and salt and pepper, cook 1 min.

    Serve over pasta. Top with parsley and Parmigiano.
