Ingredients:

Salad
  • 3 cups - mixed salad greens
  • 3 cups - baby spinach
  • 1/2 - small red onion, sliced
  • 1 - large Granny Smith apple, sliced
  • 1 cans - mandarin oranges, small can, drained
  • 1/4 cups - Craisins
  • 1/4 cups - raw chopped walnuts
  • Dressing (can make in advance)
  • 3 tablespoons - rice vinegar
  • 2 tablespoons - orange juice
  • Directions:

    Mix all vegetables and serve dressing on side for lower calories. Dip fork in dressing and then scoop up salad.

    You can also add grilled chicken breast to salad as well.
