  • 2 1/2 pounds - sirloin roast
  • 2 - green peppers, chopped or sliced
  • 1 1/2 - onions, chopped, or more to tasteq
  • 2 cans - diced tomatoes, drained
  • 1 cans - Rotel tomatoes with green chilies with juice
  • 2 packages - taco seasoning, OR mix of salt, pepper, chili powder, cumin, garlic powder and onion powder
  • Directions:

    1. Brown roast on all sides and then place in crockpot.

    2. Add peppers, onions and tomatoes. Pour in seasonings and mix a bit. Add the Rotel tomatoes. Cook on medium-high heat for 5-6 hours.

    3. When done, pull out roast and shred the beef with a couple of forks. Add back to crockpot mix until ready to serve.

    Use either packaged taco seasoning or your own mix of chili powder, cumin, garlic powder, and onion powder (to taste). This dish is mildly spicy; if you want it hotter, add cayenne pepper.
