Emerald Mashed Potatoes Tell a Friend

Ingredients:

  • 3 - large potatoes (about 2 pounds)
  • 3/4 cups - sour cream
  • 1/2 sticks - butter, at room temperature
  • 1 tablespoons - milk
  • 6 slices - fried bacon, crumbled
  • 2 - medium zucchini, shredded, squeezed dry
  • 4 - green onions, chopped
  • 1/2 cups - minced fresh parsley
  • 1 teaspoons - minced fresh dill
  • - salt and pepper, to taste
  • Directions:

    Bake potatoes and cut in half lengthwise.

    Scrape pulp into large bowl; beat in sour cream, butter and milk.

    Stir in remaining ingredients.

    Spoon back into potato shells, and place in a serving dish; heat in oven for 20 minutes.
