  • - Lime Wedge
  • 5 ounces - Maine Root Ginger Beer, chilled
  • 1 teaspoons - Ginger-Lime Syrup, see below
  • 2 ounces - Gosling's Black Seal Rum
  • Ginger-Lime Syrup:
  • 1/2 cups - Fresh Ginger, grated
  • 1 cups - Water
  • 1 cups - Demerara Sugar
  • 1 - Zest of 1 Lime
  • Directions:

    For the drink:
    Fill a tall glass with ice cubes. Squeeze lime wedge over ice and toss wedge in. Pour in ginger beer. Add ginger-lime simple syrup and stir. Float rum on top.

    Ginger-Lime Syrup:
    In a small pan, combine grated fresh ginger, water and Demerara sugar and the zest of one lime. Simmer on low until reduced to about 1/3 cup thick, glossy syrup. Strain and discard solids. Let cool.
