Curried Eggs Tell a Friend

Ingredients:

  • 2 tablespoons - butter
  • 2 tablespoons - flour
  • 1 1/4 cups - milk
  • 3/4 cups - chopped mushrooms
  • 1/2 teaspoons - curry powder, or more, to taste
  • 1 cups - half-and-half
  • 3 - hard-boiled eggs, sliced
  • 1/2 cups - grated sharp cheddar cheese
  • - salt and pepper, to taste
  • Directions:

    Melt butter in dutch oven. Saute chopped mushrooms; add flour, curry powder, milk and half and half to make white sauce.

    Add hard boiled eggs and cheese. Simmer and serve hot over cornbread.
