Cup of Noodles Soup Tell a Friend

  • 1 teaspoons - fresh minced ginger
  • 1 dashes - crushed red pepper
  • 1 - green onion, chopped finely
  • 1/4 cups - yellow pepper, finely chopped
  • 2 - handfuls of fresh spinach leaves
  • 2 ounces - vermicelli rice noodles
  • 1 - chicken or vegetable stock bouillon cube
  • 1 - lime, halved
  • 1 - handful of fresh cilantro and basil, chopped
  • Directions:

    In a large heatproof bowl, combine all ingredients except lime.

    Boil fresh water in another container in the microwave (about 5 minutes) or in a kettle.

    Pour hot water over the ingredients in the bowl until water just covers everything. With a fork, stir until bouillon cube is dissolved.

    Let soup rest for a minute, then squeeze lime over top and enjoy!
