Cucumber Quinoa Salad Tell a Friend

  • 1 - cucumber, diced
  • 2 cups - chilled, cooked quinoa
  • 1/2 cups - diced red onion
  • 1/2 cups - crumbled feta cheese
  • 1/3 cups - roughly chopped fresh basil
  • Vinaigrette
  • 1/4 cups - olive oil
  • 2 tablespoons - apple cider vinegar or red wine vinegar
  • - juice from one lemon
  • 1/2 teaspoons - Italian seasoning
  • - salt and pepper, to taste
  • Directions:

    Place all of the salad ingredients together in a large bowl. Toss to combine.

    Whisk together all the vinaigrette ingredients in a small bowl. Pour the vinaigrette over the salad ingredients and toss to mix well.

    Chill and enjoy!
