Crustless Zucchini Quiche Tell a Friend

Ingredients:

  • 8 slices - Bacon, (optional)
  • 2 tablespoons - butter, melted
  • 1/4 cups - onion, chopped
  • 1/2 cups - flour
  • 4 cups - zucchini (or more), thinly sliced
  • 1/4 teaspoons - pepper
  • 1/4 teaspoons - basil leaves, best if fresh
  • 2 cups - (8 oz) mozzarelle cheese, shredded
  • 8 ounces - Swiss Cheess, shreded or slices
  • 4 - eggs, beaten
  • 1 teaspoons - salt
  • 1 1/2 cups - milk
  • 1 tablespoons - parsley flakes, best fresh
  • 1/4 teaspoons - garlic powder or, 1 fresh clove
  • 1/4 teaspoons - oregano leaves, best fresh
  • Directions:

    Cook bacon & crumble.
    Preheat oven to 350 degrees. Lightly grease large size pir plate or square Pyrex bowl.
    Line bottom of dish with Swiss cheese & bacon.
    Combine remaining ingredients, beat or whisk until smooth. Pour over Swiss cheese.
    Bake 35 minutes or until set.

    Brief Description

    Save time & calories by not having a crust, but if you add a salad you have a full meal.
    May use different cheeses & vegetable. Full of protein even if you do not add bacon. May use chicken.

    Notes

    If like a crust use a pie shell or Pillsbury crescent rolls - spread with fingers to cover dish. Than spread 2 t. yellow mustard over before adding filling. Adds a special flavor.
