Crock Pot Chicken Taco Chili Tell a Friend

Ingredients:

  • 1 - small onion, chopped
  • 1 cans - 15.5 oz. black beans, drained
  • 1 cans - 15.5 oz. kidney beans, drained
  • 1 cans - 8 oz. tomato sauce
  • 10 ounces - frozen corn kernels
  • 2 cans - 10 oz. diced tomatoes with chilies
  • 4 ounces - can chopped green chilies
  • 1 packages - reduced sodium taco seasoning (or homemade version below)
  • 1 tablespoons - cumin
  • 1 tablespoons - chili powder
  • 24 ounces - (about 3) boneless, skinless chicken breasts
  • 1/4 cups - chopped fresh cilantro, for garnish
  • Homemade taco seasoning mix
  • 1 1/2 tablespoons - cumin
  • 1 1/2 tablespoons - chili powder
  • 1/4 tablespoons - garlic powder
  • 1/4 teaspoons - onion powder
  • 1/4 teaspoons - dried oregano
  • 1/2 teaspoons - paprika
  • 1 teaspoons - kosher salt
  • 1/2 teaspoons - black pepper
  • Directions:

    Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.

    Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.

    A half hour before serving, remove chicken and shred.

    Return chicken to slow cooker and stir in.

    Top with fresh cilantro and your favorite toppings!
