Creamy Chicken Enchiladas Tell a Friend

Ingredients:

  • 2 tablespoons - butter
  • 1 - onion, thinly sliced
  • 3/4 cups - shredded cooked chicken
  • 1/4 cups - diced green chilies
  • 3 ounces - cream cheese, diced
  • - salt
  • 1/4 cups - corn oil
  • 4 - corn tortillas, fried soft
  • 1/3 cups - whipping cream
  • 1 cups - grated Monterey Jack cheese
  • - salsa
  • Directions:

    Saute onion in butter. Remove from heat and mix in chicken, chilies, and cream cheese.

    Spoon filling onto tortillas and roll. Place in baking dish seam side down.

    Pour sauce over and sprinkle with cheese. Bake at 350 degrees F for 15 minutes.

    Serve with salsa.
