Ingredients:

  • 3 bags - 5 lb. bags raw couscous
  • 1 1/2 gallons - water
  • 6 - cucumbers, chopped
  • 12 - tomatoes, chopped
  • 4 - red onions, chopped
  • 15 cups - garbanzo beans
  • 4 cups - mint
  • 13 1/2 teaspoons - lemon juice, between 12 & 15 tsps, to taste
  • 1 cups - olive oil
  • Directions:

    1) Add couscous to boiling water and cook for 8-10 minutes stirring occasionally. Drain and let cool.
    2) Add remaining ingredients and toss.

    Serving size: 1 cup
