Cornbread Salad Tell a Friend

Ingredients:

  • 1 packages - 8.5 oz. cornbread mix
  • 1 envelopes - ranch dressing mix
  • 1 cups - sour cream
  • 1 cups - mayonnaise
  • 1/2 cups - chopped green pepper
  • 1/2 cups - chopped red pepper
  • 1/2 cups - chopped onion
  • 3 - large tomatoes, chopped
  • 1 cans - 16 oz. pinto beans, drained
  • 2 cups - fresh or frozen corn
  • 2 cups - shredded cheddar cheese
  • 8 slices - cooked bacon, crumbled
  • Directions:

    Bake cornbread according to package directions. Combine ranch dressing with sour cream and mayonnaise.

    Mix peppers, onion, tomatoes, pinto beans and corn together.

    In a large 3-quart bowl, layer 1/2 corn bread, 1/2 vegetables, 1/2 cheese, 1/2 bacon and 1/2 of dressing. Repeat layers.

    Chill until ready to serve.
