Ingredients:

  • 2 cups - corn, fresh or canned
  • 1 teaspoons - salt
  • 1/8 teaspoons - pepper
  • 1 - egg
  • 1 teaspoons - melted butter
  • 1/2 cups - milk
  • 2 cups - flour
  • 2 teaspoons - baking powder
  • - powdered sugar, for dusting after cooking
  • Directions:

    Chop corn very fine and add salt, pepper, well-beaten egg, melted butter, milk, flour and baking powder.

    Drop batter by tablespoonfuls into deep hot fat (360 to 370 degrees F). Fry 2 to 3 minutes, until golden brown.

    Drain onto paper towels. Dust with powdered sugar before serving, if desired.
