Ingredients:

  • 1 cups - black beans, cooked day before
  • 2 teaspoons - salt
  • 1 - large sweet red pepper, roasted and peeled
  • 1 1/2 cups - salsa
  • 1 1/2 cups - canned corn kernels, drained
  • 3 - green onions, sliced
  • 1/2 cups - minced fresh cilantro
  • Directions:

    Combine all ingredients, cover and refrigerate for 1 hour.

    Serve with tostadas.
