Ingredients:

  • 1 cans - black beans
  • 1 1/2 cups - rice, cooked in 3 cups water for 20 minutes
  • 1 tablespoons - salt
  • 2 teaspoons - diced garlic
  • 2 - onions, chopped
  • 1 cans - 4 oz. chopped green chilies
  • 1 pounds - Monterey Jack cheese, grated
  • 1 pounds - cottage cheese
  • Directions:

    Mix beans and rice, garlic and green chilies. Cover bottom of casserole with half of mixture (1 layer).

    Then add a layer of Jack cheese and cottage cheese. Repeat layers.

    Bake for 30 minutes at 350 degrees F.
