Ingredients:

  • 2 tablespoons - butter
  • 4 - small zucchini or yellow squash, sliced
  • 1 - small onion, chopped
  • 1 - bell pepper, diced
  • 1/2 cups - water
  • 1 - large tomato, chopped
  • 1 1/2 cups - corn kernels
  • - salt and pepper
  • Directions:

    Simmer squash, onion, and pepper in butter. Add water and cook 6 minutes.

    Mix in corn and tomatoes; cook until tender. Season (1/2 teaspoon sugar and pinch of oregano may be added).
