Ingredients:

Cake
  • 2 cups - GF all purpose flour
  • 1 teaspoons - baking powder
  • 1 teaspoons - baking soda
  • 1/4 teaspoons - salt
  • 1 3/8 teaspoons - Xanthan Gum, Omit if your GF flour has it already
  • 3/4 cups - Coconut Oil, Melted
  • 1/2 cups - Non Dairy Milk, Cashew or coconut work well
  • 2 whole - eggs
  • 1 cups - sugar
  • 2 teaspoons - vanilla
  • 1 1/2 cups - Applesauce
  • 1 teaspoons - cinnamon
  • 1/4 teaspoons - nutmeg
  • Crumble Topping
  • 1/4 cups - Dairy Free Butter
  • 1/3 cups - White Rice Flour, Can sub for GF flour
  • 1/2 cups - Brown Sugar
  • 1 teaspoons - cinnamon
  • 1/4 cups - walnuts or pecans, chopped, optional
  • Glaze
  • 1 cups - powdered sugar
  • 2 tablespoons - Milk, add extra if needed
  • 1/2 teaspoons - Vanilla
  • Directions:

    Preheat oven to 350 F. Cream eggs, sugar, vanilla, and non dairy milk. add applesauce, coconut oil, cinnamon, and nutmeg. beat for 2 minutes. Slowly add GF all purpose flour. Add baking powder, baking soda, salt, and xanthan gum. Beat for 5 minutes on medium. Pour 1/2 cake mixture into greased bundt pan. Mix crumble ingredients and pour 1/2 of mixture into the bundt pan. Add the remainder of the cake mixture. Top with remaining crumble. Bake for 60-70 minutes. Allow to cool.
    Mix glaze ingredients and pour over cooled cake before serving.
