Cleansing Corn Chowder Tell a Friend

  • 4 cups - corn off the cob, about 4-5 large ears
  • 2 cups - almond milk
  • 1 - avocado
  • 1 teaspoons - cumin
  • 2 teaspoons - finely minced onion
  • - celtic sea salt and freshly ground black pepper, to taste
  • 1/4 cups - alfalfa sprouts, optional
  • 1/4 cups - diced red bell pepper, optional
  • Directions:

    Setting aside about 1/4 cup of corn, sprouts and bell pepper, blend the rest of the ingredients together in a mixing bowl. Plate the mixture and top with a sprinkling of reserved corn kernels, sprouts and/or diced red pepper bits as desired.

    If you prefer, you can make your own almond milk by blending 1 cup of almonds with 3 cups of water in a blender and straining the mixture through a cheesecloth or very fine sieve to separate the liquid from the pulp, which you'll discard.
