cups - corn off the cob cups - almond milk - avocado teaspoons - cumin teaspoons - finely minced onion - Celtic sea salt and freshly ground black pepper cups - alfalfa sprouts cups - diced red bell pepper

Setting aside about 1/4 cup of corn, sprouts and bell pepper, blend the rest of the ingredients together in a mixing bowl. Plate the mixture and top with a sprinkling of reserved corn kernels, sprouts and/or diced red pepper bits as desired.

If you prefer, you can make your own almond milk by blending 1 cup of almonds with 3 cups of water in a blender and straining the mixture through a cheesecloth or very fine sieve to separate the liquid from the pulp, which you'll discard.
