Chunky Ham and Vegetable Frittata Tell a Friend

Ingredients:

  • 1 - onion
  • 1 - carrot
  • 1 - red pepper
  • 1 - green pepper
  • 1 - zucchini
  • 6 ounces - ham steak
  • 2 - eggs
  • 4 tablespoons - chopped fresh parsley
  • - salt and pepper
  • - PAM cooking spray
  • Directions:

    1. Prepare the ingredients: peel and chop the onion and carrot; deseed and dice the peppers; trim and dice the zucchini; remove all visible fat from ham steak and dice; lightly beat the eggs.

    2. Mix the eggs and parsley in a bowl and season well. Pour into a pan sprayed with PAM, scatter over the vegetables and ham and cook gently for 8-10 minutes or until the bottom is set and golden.

    3. Place the pan under the broiler for 2-3 minutes to brown the top.
