Chunky Chicken Salad Tell a Friend

  • 6 - boneless skinless chicken breasts
  • 1 cups - chopped celery
  • 1 - small white onion, finely diced
  • 1 bunches - green seedless grapes (whole)
  • 1 cups - whole cashew nuts
  • 1 cups - mayonnaise, or more or less, to taste
  • - salt and pepper
  • - lettuce leaves, melon wedges, pineapple wedges, optional, for serving with
  • Directions:

    Boil chicken breasts in salted water until tender; cool completely.

    Cut chicken into cubes, once cooled.

    Add chopped celery, diced onion, whole green grapes and cashews; season generously with salt and pepper.

    Fold mayonnaise thoroughly into the cooled chicken salad mixture.

    Serve on a lettuce leaf, a pineapple wedge or a melon wedge. Garnish with additional whole cashew nuts.

    Brief Description

    Chicken with grapes, cashews, onion and celery; I like to serve it in a fresh pineapple boat.
