Chili-Beef Tacos Tell a Friend

  • 4 tablespoons - chili powder
  • 1 teaspoons - ground cumin
  • 2 teaspoons - olive oil
  • 1 - large onion, finely chopped
  • 1 pounds - lean ground beef
  • 16 ounces - canned tomato sauce
  • 15 ounces - canned black beans, rinsed and drained
  • 16 - soft or crunchy taco shells
  • - shredded cheese
  • - sour cream
  • - chopped cilantro
  • - taco sauce
  • 2 cloves - garlic, minced
  • Directions:

    Toast chili powder and cumin in a large skillet over med heat until fragrant, about 30 seconds. Add oil to skillet and heat, then cook onion till tender, about 3 minutes. Add garlic and cook until fragrant, about 3 minutes. Add beef, breaking up with wooden spoon and cook until cooked through, about 5 minutes. Add tomato sauce and beans; cook 5 minutes more or until heated through. Add salt or chipotle powder to taste.

    A great weightwatcher recipe. Use as taco filling or serve over tortilla chips for nachos. This is a double batch, good for entertaining or to freeze for another night.
