Chickpea Curry Over Rice Tell a Friend

Ingredients:

  • 2 - Carrots, Chopped
  • 1 - Bell pepper, Chopped
  • 1 1/2 cups - Greek yogurt
  • 2 cans - Chickpeas, Rinsed and drained
  • 1 1/2 teaspoons - Curry Powder
  • 1/2 teaspoons - Garlic powder
  • 4 cups - Brown or white rice
  • Directions:

    1. Chop bell pepper and carrots.
    2. Toss chopped veggies, can of drained chickpeas, and a cup of greek yogurt in a large pan or pot.
    3. Stir in curry and garlic powder.
    4. Cook until soft.
    5. Serve over rice
