Chickpea and Feta Salad Tell a Friend

  • 2 cups - canned chickpeas, rinsed, drained
  • 2 cloves - garlic, finely minced
  • 2 tablespoons - uncooked thinly sliced scallions
  • 1/2 - large sweet red pepper, diced
  • 2 tablespoons - fresh parsley, finely minced
  • 9 - large black or green olives, pitted, chopped
  • 1/2 cups - crumbled feta cheese
  • 1 tablespoons - olive oil
  • 3 tablespoons - fresh lemon juice
  • 1/8 teaspoons - black pepper, or to taste
  • 1 teaspoons - lemon zest, for garnish
  • Directions:

    In a medium bowl, combine chickpeas with garlic, scallions, red pepper, parsley, olives and feta cheese; toss to combine well.

    In a small bowl whisk together oil and lemon juice; pour over the chickpea mixture and season it to taste with black pepper.

    Garnish with lemon zest before serving.

    Yields about 1/2 cup per serving.
