  • 1 boxes - Long Grain Wild Rice (fast cooking)
  • 1/4 cups - Butter or Margarine
  • 2 whole - Medium Onions, chopped
  • 4 whole - Celery Ribs, chopped
  • 16 ounces - Sliced Water Chestnuts
  • 5 cups - Cooked Chicken, diced
  • 4 cups - Cheddar Cheese, grated
  • 2 cans - Cream of Mushroom Soup
  • 16 ounces - Sour Cream
  • 1 cups - low-fat Milk
  • 1/2 teaspoons - Salt
  • 1/2 teaspoons - Pepper
  • Directions:

    Prepare rice according to package directions; set aside. Melt butter; add onion, celery, and water chestnuts. Saute until tender. Stir in rice, chicken, 3 cups cheese, and remaining ingredients (except last cup of cheese).

    Spoon into lightly greased 15x10-inch pan. Bake at 350 for 30 minutes. Sprinkle with remaining cheese and bake for 5 minutes more.
