Wild Rice & Chicken Casserole Tell a Friend

  • 1 packages - Wild Rice
  • 1 1/2 pounds - Boneless chicken, Cubed
  • 1 cups - Presliced Mushrooms, Minced
  • 1/2 teaspoons - Garlic, Minced
  • 1 cans - Cream of Mushroom Soup
  • 3/4 cups - Sour Cream
  • 1/4 cups - Water Chestnuts, Minced
  • 1/4 teaspoons - Pepper
  • 1 packages - Ritz Crackers, Crushed
  • 1/4 cups - Butter, Melted
  • Directions:

    Cook rice according to package instructions. Set aside.
    Heat pan over medium-high heat & coat with cooking spray.
    Sauté chicken, mushrooms & garlic about 6 minutes or until chicken cooked.
    Combine wild rice, chicken mix, mushroom soup, sour cream, water chestnuts & pepper.
    Stir well and spoon mixture into greased casserole dish.*

    Preheat oven to 350 degrees.
    Combine crackers, melted butter and stir well. Sprinkle topping over chicken casserole.
    Bake for 35 minutes or until bubbly.

    *You can cover casserole & refrigerate overnight. Next day uncover the casserole & let sit until room temp while mixing topping.
