  • 3 cups - diced cooked chicken
  • 1/4 cups - dried cranberries
  • 1/2 cups - diced celery
  • 1/2 cups - apple, diced
  • 1/4 cups - chopped walnuts or pecans, optional
  • 5 tablespoons - mayonnaise
  • 2 teaspoons - lemon juice
  • 1/4 teaspoons - salt
  • 1/8 teaspoons - black pepper
  • Directions:

    Combine chicken, cranberries, celery, apple and nuts (if using).
    In a small bowl combine mayonnaise, lemon juice, salt and pepper. Stir into the chicken, adding more mayonnaise if needed.
    Line bread or rolls with lettuce and spread chicken salad on bread or serve chicken salad on lettuce-lined plates.
