Chicken Noodle Soup Tell a Friend

Ingredients:

  • 1 1/2 pounds - Chicken breast
  • 4 stalks - Celery, chopped
  • 1 - Large white onion, diced
  • 1/2 cups - Fresh parsley, chopped
  • 1 packages - Frozen egg noodles
  • 64 ounces - Chicken broth, (2 32oz cartons)
  • 1 cups - Matchstick carrots
  • - Salt, to taste
  • - Pepper, to taste
  • Directions:

    1. Place chicken, onion and celery in a large pot.
    2. Add 1 container chicken broth and additional water, if needed, to cover contents.
    3. Heat to a boil, then reduce heat slightly and simmer until chicken is cooked through, about 10 minutes.
    4. Remove chicken and add chicken broth, carrots and egg noodles. Maintain at a simmer. Meanwhile, shred chicken with 2 forks.
    5. When noodles are cooked, add chicken back to pot, along with parsley and salt and pepper to taste. Serve and enjoy.
